Ingredients
  

  • 1 red pepper, chopped
  • 1 green pepper, choped
  • 2 cups cooked quinoa
  • 7 oz corn
  • 4-8 leaves romaine lettuce, shredded
  • 1 medium tomato, seeded and diced
  • 2 oz Reverse Your Fatty Liver Salsa Verde
  • 19 oz no-salt-added canned black beans

Instructions
 

  • Add peppers to a non-stick pan and cook on medium-high heat, stirring often.
  • Remove the veggies and put the black beans and corn into the pan to heat.
  • Divide the quinoa, beans, corn and peppers into 4 bowls.
  • Top each bowl with lettuce, tomatoes, and Salsa Verde.
  • Serve and enjoy!
