Reverse Your Fatty Liver Sweet Potato and Lentil Stew

- 1 Tbsp Bragg Organic Extra Virgin Olive Oil
- 1 medium onion diced
- 2 cloves garlic minced
- 2 cup dry green lentils rinsed well
- 1 large sweet potato peeled and cubed
- 6 cup vegetable broth
- 2 bay leaves
- 1/2 tsp turmeric
- 1/4 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- fresh parsley to garnish
Put a large soup pot on medium heat.
Add the oil and cook onion and garlic till lightly browned, about 3 minutes.
Add the rest of the ingredients and bring to a vigorous boil.
Now turn down to low and simmer uncovered, for about 20 to 30 minutes. Lentils should be cooked through.
Remove from heat and adjust salt if necessary.
Sprinkle with fresh parsley and enjoy!
