Reverse Your Fatty Liver Sweet Potato and Lentil Stew

Ingredients
  

  • 1 Tbsp Bragg Organic Extra Virgin Olive Oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cup dry green lentils rinsed well
  • 1 large sweet potato peeled and cubed
  • 6 cup vegetable broth
  • 2 bay leaves
  • 1/2 tsp turmeric
  • 1/4 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • fresh parsley to garnish

Instructions
 

  • Put a large soup pot on medium heat.
  • Add the oil and cook onion and garlic till lightly browned, about 3 minutes.
  • Add the rest of the ingredients and bring to a vigorous boil.
  • Now turn down to low and simmer uncovered, for about 20 to 30 minutes. Lentils should be cooked through.
  • Remove from heat and adjust salt if necessary.
  • Sprinkle with fresh parsley and enjoy!
