Soak the lentils for 24-48 hours, longer is better.
When ready to cook, add to water or stock in a large pot and bring to boil.
Cover and set burner to low.
In a separate pan, add spices, oil, carrots, pepper, onion, and celery, and cook until onion is translucent (about 5 minutes).
When lentils are s oft, mix everything together and cook for an additional 15-20 minutes.
