- 2 large sweet potatoes
- 3 tbsp coconut or olive oil
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper

Preheat your oven to 450°F
Pat your sweet potato wedges dry with napkins, and then combine them and the oil in a large

Arrange fries on a single layer on on oiled baking sheet, leaving a little room in between wedges
Cook for 18 to 25 minutes, turning and flipping occasionally
