- 1 can chickpea/garbanzo beans
- 2 small beets
- 2 cloves garlic cloves (whole, peeled)
- juice from 1/2 lemon
- 2 tsp tahini
- pinch salt to taste
- Rinse and cut roots off beets. 
- Place beets in pot over medium/high heat and cover with water. 
- Once water starts to boil, bring down heat to medium and continue to cook until beets are soft and tender (use a fork to poke them). 
- Once soft & tender, remove from pot and place aside until finished with next steps. 
- Place chickpeas in your blender along with garlic, lemon juice, tahini and salt. 
- When beets are cool enough place them in the blender as well and process until everything is creamy. 
- Taste and feel free to add more lemon, more salt, or more tahini as you wish.
