Reverse Your Fatty Liver Hearty Leek and Potato Soup

Ingredients
  

  • 1 medium onion diced
  • 1 clove garlic minced
  • 1 Tbsp olive oil
  • 4 large leeks(white and light green parts only) chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp coriander powder
  • 6 medium potatoes peeled and cubed
  • 2 whole bay leaves
  • 4 cup vegetable stock
  • 1 14oz can coconut cream
  • sea salt and black pepper to taste
  • fresh snipped chives

Instructions
 

  • In a large soup pot cook the onions, garlic and olive oil till onions are softened.
  • Add the thyme, rosemary and coriander and mix.
  • Add the potatoes, leeks, bay leaves and vegetable stock and bring to a boil.
  • Reduce heat, cover and simmer till potatoes are soft about 15 minutes.
  • Remove from heat and remove bay leaves.
  • Add the coconut cream.
  • Blend the soup using an immersion blender , or hand mixer on low, till soup is blended to chunky state.
  • Add salt and pepper to taste. Garnish with chives.
